On tasting, this Saint-Romain reveals a golden color, a delicate nose of citrus fruits and white flowers. The very round mouth, all in freshness deploys a supple and tasty substance. A beautiful expression of Chardonnay, to be enjoyed in its youth as an accompaniment to roast poultry.
Based in Nantoux, a small village in the Haute Côte de Beaune, Frédéric Leprince vinifies his cuvées from grapes provided by his winegrower friends, just enough to produce a few pieces. Vinification and aging are marked by simplicity, with a view to allowing the terroirs to express themselves as much as possible. For this cuvée, the Chardonnays harvested by hand are pressed directly, the juices lightly settled and then fermented using indigenous yeasts. The aging takes place in barrels for twelve months in a very cool cellar, followed by a short passage in vats after racking. Slightly filtered and fined, the wine is bottled by gravity.
