    Description

Filo di Seta is a unique Brunello that is the result of a rigorous selection of grapes harvested by hand near the Castello Romitorio. Filo di Seta, which translates as Silk Thread, is the name of a creek that flows through the forest nearby. Fermentation takes place in stainless steel tanks with an initial short period of cold maceration (below 20°C) on the skins for about 15-20 hours. This is followed by up to 20 days of maceration at a higher controlled temperature. Malolactic fermentation that is naturally caused then lasts for about 10 days, before the wine is rested to separate the lees. The wine matures in oak for approximately 30 months, and after bottling the wine is aged in Castello Romitorio’s temperature-controlled cellars for an approximately 12 months before release.

    What The Critics Say
"Complex and sophisticated with seamless layers of ripe and dried cherries, truffles, caramel, dried flowers, nutmeg, chocolate orange and cassis. It’s full-bodied, layered and polished, with firm tannins that are well integrated. Long and elegant. Delicious already but better after 2024."

    ABOUT THIS BRAND

    Castello Romitorio

The Castello Romitorio Brunello di Montalcino is the estate's flagship wine and reflects more than 30 years of working in harmony with nature within the terroir of Montalcino. It is a wine that expresses the Montalcino territory with purity and embodies the finest aspects o f the area’s longstanding tradition of cultivating world class Sangiovese. Founded in 1984, Castello Romitorio has been committed to the study, exploration and promotion of Brunello di Montalcino DOCG. This has been possible thanks to the work of the Italian artist Sandro Chia, and his bond with Franco Martini, the first cellar master of Castello Romitorio, whose family has been producing Brunello di Montalcino for generations. Sandro Chia planted Romitorio’s first vineyards from 1984 to 1993 using ancient sangiovese varietals local to Montalcino. Today these old vines compose about 50% of Romitorio’s vineyards and serve as an immense heritage of Biodiversity. This bond now continues between Sandro’s son, Filippo Chia, and Franco’s son, Stefano Martini. The team has been working together for decades and has a profound knowledge of the territory and the traditions of winemaking in Montalcino. The work carried out between the vineyard rows is meticulous and great care is taken to understand each vineyard in order to ensure that it develops in harmony. Each plot is kept separate in the cellar and carefully aged with the goal of preserving each plot's unique characteristics. Castello Romitorio produces wines that are undeniably terroir driven and transmit a unique matrix which makes each wine an undeniable expression of their land. Their Sangiovese from Montalcino embodied in their Brunello Riservas, Brunellos and Rosso di Montalcino are wines with a combination of subtle nuances that represent the ancient, and wild mountain Terroir. “CASTELLO ROMITORIO'S WINES ARE SOME OF MONTALCINO'S SLEEKEST AND MOST PERFUMED...” - IAN D'AGATA
