Description
Intense ruby color, with purple highlights. In the aromatic characteristics we find a wine of high aromatic intensity characterized by strawberry, sour cherry, raspberry, tomato, lavender, with licorice and nutmeg following. Full on the palate, with cool acidity, fine balance supported by intense but mature tannins. An extremely charming whole that leads us to a very good aftertaste with duration.
Kayafas is a vineyard, planted 43 years ago, next to the village of Trilofos, located at an altitude of 180 meters on limestone soils. The harvest is done manually at the end of September, with a 20% fermenting with whole clusters, while the whole fermentation is done with native yeasts. It then matures for 12 months in French, 500 liter second-hand oak barrels. The extraction takes 40 days. The wines are bottled by hand and are not filtered.
