A playful yet refined Gamay, brimming with freshness and drinkability. Timo’s Gamay is always a crowd favourite - juicy, energetic, and packed with whole-bunch crunch. The 2024 vintage is no exception. Sourced from Dixon’s Creek and given the full Timo treatment—whole-bunch fermentation with a hit of carbonic maceration—this is Gamay with attitude. Bright red berries, spice, and a hint of wild herbs lead the way, with plush fruit balanced by fine, savoury tannins. It’s a little wild and a joyful, easy to drink Gamay.

German-born, enigmatic winemaker Timo Mayer is one of the great characters of the Yarra Valley. The words bombastic, charismatic and wild are as much applicable to the man as his wines. From his close-planted Yarra Valley vineyard, evocatively named 'Bloody Hill', Timo carves out some astounding wines made with low levels of new oak and minimal additions. The signature of Timo's winemaking style is his penchant for whole-bunch ferment. His wines have an ethereal quality, firm tannins and impeccable structure. These are compelling and extremely limited wines that tell a unique story of the Yarra Valley.
Description
Dr. Mayer is Pinot Noir with a wilder streak—bold, structured, and driven by Timo’s signature whole-bunch fermentation. In 2024, the warmer ripening season brought a little more fruit weight, but make no mistake—this is still a savoury, stalky, and structured Pinot.
Timo backed off the whole-bunch component this year to just 30% due to the extra power already inherent in the vintage. Expect layers of dark cherry, cranberry, and spice, wrapped in fine, detailed tannins that stretch long across the palate. It's a great vintage of this wine, ready to drink but also perfect for the cellar.
Wildly aromatic, deeply expressive, and made in tiny quantities. If you like Pinot with tension and bite, step into the Doktor’s office.
